Foodie Friday: Gluten Free Chocolate Revel Bars
This is a recipe that one of my best friend's mom would make and I have been making for 30 years.
I was happy with the yummy results when I adapted the recipe to a gluten free one.
Chocolate Revel Bars (Gluten Free)
Crust:
1 cup butter, softened
2 cups brown sugar
2 eggs
2 tsp. vanilla
2 1/2 cups GF flour mixture (use 2 tsp. xanthum gun if your mixture does not have it)
1 tsp salt
1 tsp. baking soda
3 cups GF oats
Topping:
2 cups chocolate chips (semi-sweet or milk chocolate)
1 can of sweetened condensed milk
3 TBSP butter
Cream together butter, sugar, eggs, and vanilla.
Blend in dry ingredients until well mixed. Press 2/3's of the cookie dough into a lightly greased jelly roll pan. I use my hands that I wet with cold water.
Use your favorite melting technique (microwave, stovetop) to melt together the topping ingredients.
Spread chocolate topping over crust. Lick chocolate bowl.
BLOB (official baking term) the remaining crust over the chocolate.
Bake at 350 degrees for 25-30 minutes. Let cool, cut, and enjoy!! These are great for bake sales and potlucks--always very popular.
