Foodie Friday: Gluten Free Mud Pie
We have always loved ice cream pies, but since my hubby was diagnosed with Celiacs, ice cream pies are our go to dessert for birthdays. They are easy and oh so delicious!
Gluten Free Mud Pie
1 package of GF chocolate sandwich cookies
1/3 cup sugar
1/2 cup butter melted
1/2 gallon GF coffee flavored ice cream (I used a local brand, but Bryers is GF)
1/2 can GF milk chocolate frosting
1 1/2 cups GF whip cream (I whip my own)
This is not the normal brand of GF sandwich cookies I used, but it is what the store had and they worked well.
Crush the entire package (because we GF people know that it is not only costs 3 times more, but you get a third fewer cookies) in a plastic bag.
Add the sugar and melted butter. This is more butter than typical cookie crusts call for, but trust me, it makes it so good and chunky and yummy!
Press the crumbs into a well greased pie plate. Cover with plastic wrap and freeze for 30 minutes.
Soften ice cream and spread into frozen crust.
Top with the chocolate frosting (I am not a fan of canned frosting, but in this it is delicious).
When ready to serve, top with whipped cream--I added a few chocolate shavings too. Cut with a sharp knife that you run under hot water. ENJOY!!
This looks fabulous- what a great idea for a gluten free dessert other than the usual GF cakes!
